Taj turns organic
Hindustan Times — May 26, 2006

As the city looks for more excuses to eat healthier, Mumbai’s health foodies have another hub to indulge at. Organic food is emerging as the new cuisine of fashion, and promising to satisfy the palate as well as restore body and soul is Pure, India’s first international restaurant with a focus on organic ingredients at Taj Lands End. The brainchild of New York based chef Michel Nischan, the restaurant presents food that uses naturally-balanced flavours, which bring with them the promise of good health.

“Unlike the highly saturated and processed food stuff we get everywhere, at Pure we offer fresh, wholesome and organically grown veggies, healthy meats and seafood—delivered fresh from our farms in Bangalore.” With an off-white and minimalist décor, Pure also boasts of an intimate private dining room surrounded by a stock of select wines. “It’s for private business luncheons or large family gatherings,” says Karambit Singh Kang, General Manager of Taj Lands End.

The beverages and organic juices, like the food, are also are made using fruit and vegetable extracts . For alcohol, there are organic wines and beers and loose leaf teas for teetotalers. “As country children we ate only organic food, now we have to pay a higher price for it,” says Nischan. Though the taste of velvety textured, rich tasting sauces might be an acquired one, a dose of healthy food is never a bad idea. Pure has opened at Taj Lands End, Bandra.
